Pickled red onions

Pickled red onions can be just the zest the food needs. We use them for a lot of dishes at home. The last hit is together with a delicious tuna mousse. At first it was for all kinds of burgers and tapas, but gradually they are on the table very often. When the first potatoes arrive, you must definitely make potato mats with fried onions and pickled red onions.

6 red onions
2 dl. clear vinegar
2 dl sugar
5 peppercorns

The scallions perfectly fine, possibly on a meat grinder or a grater. It gives the tears free flow in the meantime.. Put the onions on scalded glasses. I always use an old patent glass, it looks so decorative.. Boil the stock and pour over the onions and let them soak a bit. Can be kept for several weeks in the refrigerator.
