Roast pork with the world's best parsley sauce

Chosen as Denmark's national dish, it must of course be included here! Loved by many Danes and hated by some. Including my daughter.. but we eat it now and then anyway. The men in the family belong to the group that loves it! We always cook the meat on the grill, - or in the oven, so you don't have to cook food in the house. The sauce is really good and you can eat it with whole roasted plaice or a fish meatball.

For 6 people, you will need:

1500 g of fresh sliced ​​pork - that sounds like a lot but it shrinks a lot during frying
750 g potatoes, depending on how hungry you are, I supplement with vegetables such as carrots and broccoli
salt and peber

The world's best parsley sauce:

2 tbsp butter
2 tablespoon of flour
1/2 liter skimmed milk
1 bouillon cube
1 large handful of fresh parsley
salt and peber
1 tablespoon oyster sauce

Put the potatoes on top. If new potatoes are not in season, I will always peel them first. Add salt and a little sugar to the boiling water. It gives a good taste. Boil them until they are tender, about 15 minutes, then pour off the water and place a tea towel over them until they are ready to use. Pat the pork off with kitchen paper and lightly salt it. Fry it in the oven or on the grill, on a grill plate - until it is crispy. Keep it warm in the oven on low heat.

Melt the butter in a pan and whisk in the flour. Add the milk in several batches and whisk well all the time so that it remains even and smooth. When all the milk has been added, just let it boil for a few minutes while you continue to whisk. If it is too thick, add a little more milk. Add the broth, salt, pepper and oyster sauce and let it continue to simmer while you wash and finely chop the parsley. Add the parsley and cook the sauce through once more.
