When we have guests or hold courses and events, here at Kærby Mølle. we often make small snacks that we serve together with a glass of wine. It always creates great excitement, and it's an easy and delicious way to make a small piece of food for yourself or your guests. they are very simple, but the taste is top notch. We also bring the recipes in issue 3, which is on the streets until May 15, 2024.
Smoked cheese salad.
Smoked cheese salad is one of the recipes I got from my mother-in-law and which the whole family loves. We look forward to the arrival of the fresh radishes every year. You can also make a thinner version and use as a dip for vegetable sticks.
1 package of smoked cheese
1 dl sour cream 18%
1 bunch of radishes or a handful from the garden
1/2 cucumber, without seeds
1 carrot
1 small handful of chives
1 teaspoon of sugar
Salt and pepper
Cut the vegetables into small cubes, save a little for decoration. Mix all the ingredients together and taste. Serve with salty crackers or toasted rye bread. You can watch a video of how to make this snack at the bottom of the page.
Pate with pear.
This is one of the really easy ones, which is also one of the family's favourites. We have used a pre-bought pate with mushrooms, but you can of course choose to make your own pate.
Make a mash of pear and sugar and garnish with fresh basil. The combination of the salty pate, the sweet mash and the herb is fantastic. Make them just before they are to be eaten so that the bread remains crispy. You can watch a video of how to make this snack at the bottom of the page.
Brie with caramelized onions
This little snack is a mouthful of heaven that can be eaten all year round.
Cut onion rings from two onions that are fried in a little butter and 2 tbsp. sugar. Add a tbsp. balsamic vinegar and a little oyster sauce. Sprinkle with salt and pepper. Arrange creamy brie cheese and compote on the bread. Serve immediately. You can watch a video of how to make this snack at the bottom of the page.
