Herring with relish

A different way to serve Christmas herring is with homemade relish.

Relish for 4 people:

2 carrots
1 onions
1 apple
1 tablespoon apple cider vinegar
1 dl sugar
0,5 chili flakes
0,5 teaspoon curry
salt and peber
1 dl water

 Grate carrots, onion and apple. Put it in a saucepan and add apple cider vinegar, sugar, chilli flakes, curry, salt, pepper and water. Simmer for 10 minutes, then allow the relish to cool.

 1 slice of rye bread per person
1 hard-boiled egg
1 piece herring
1 tbsp. pickled white onions
1-2 tbsp relish

 Come approx. 2 tablespoons of the cooled relish on the rye bread. Top with herring and pickled onions. Cut the egg and place it next to the bread.
