Protein bites

Butter beans are one of those little everyday secrets that make it easy to combine health and enjoyment. The soft, creamy beans are full of plant protein, fiber and good carbohydrates, which give the body long-lasting energy and satiety. At the same time, they contain important minerals and vitamins that support both well-being and balance in everyday life. That's why they are perfect as a base in small snacks, where they provide both a delicious consistency and a healthy, nutritious twist.

250 g butter beans (drained and rinsed)
2 tablespoons syrup
75 g nut butter, e.g. peanut butter, almond butter, coconut butter or hazelnut butter
100 g filling that binds the dough together, e.g. coconut flour, oatmeal, chopped chocolate, dried fruit or protein powder
Possibly something to roll the balls in, e.g. cocoa, coconut flour, melted chocolate or chopped nuts

Rinse and drain the butter beans. Blend the butter beans, syrup and nut butter in a food processor until smooth. Add the chosen filling and blend or stir until the dough is uniform. Form small balls with your hands and roll them in the desired topping.
