Food with beer
Beer can greatly contribute to an exciting gastronomic experience. It is a really good flavoring and "spice", and e.g. in pancakes and other baked goods, beer gives a really delicious crispness and caramel-like taste. The alcohol in beer breaks down the tissue in meat and is therefore extremely suitable for making the meat tender faster. At the same time, the beer adds richness to the dish. Beer in food has been known in Danish cuisine for many years.
Beer leg for 4 people
12 sliced venison legs
½ l broth
½ bottle of porter
1 coarsely chopped onion
5 whole peppercorns
2 bay leaves
2 thyme sprigs
Salt
Mix all the ingredients in a large pot and add the bones. Let it all boil under the lid for approx. 1 hour until the legs are very tender. They can easily tolerate standing and soaking until the next day. Drain the legs well and grill them on a baking rack in the oven until they are brown and crispy.
Served with potato wedges tossed in a little oil and thyme and a good coleslaw.
Tenderloin casserole with beer for 4 people.
3 pork loins, approx. 1 kg
2 tbsp olive oil
2 teaspoons cinnamon
1 tablespoon salt
4 dl dark beer
1 tablespoon brown sugar
3 sprigs of thyme
4 dl broth
1 red pepper
1 large red onion
150 g oyster shells
150 g small mushrooms
Trim the 3 pork tenderloins and cut them into large cubes. Brown them in the oil and add cinnamon, salt and thyme. Stir until the cinnamon has distributed. Add beer, stock, brown sugar, quartered red onion and coarse pieces of red pepper. Let the dish simmer for approx. 30 minutes Add the mushrooms. Let them cook for a few minutes. Served with mashed potatoes with a little fresh, chopped parsley.
Beer cake
2 white beers
750 g brown sugar
750 g flour
2½ tsp. baking soda
2 tbsp. cinnamon
1 tbsp. ginger
1 tbsp. crushed cloves
Beer and brown sugar are whisked together. Spices and baking soda are mixed into the flour and added. Bake in greased tins for approx. 1 hour at 150 degrees. The recipe fits 2 shortbread tins. Served with cold butter spread on the slices.
Pancakes
3 eggs
2 dl wheat flour
2 tsp. sugar
1 pinch of salt
1½ dl milk
1½ dl beer
Beat eggs together with flour, sugar and salt. Then add milk and beer. Beat the dough until smooth. Let the dough rest for 1 hour in the fridge. The batter is then beaten through and the pancakes are baked on a pan with a little butter. There will be approx. 12 thin pancakes from the dough.
