Salmon pie

You can make this small tart or terrine with a puff pastry lid with leftover fresh salmon from the night before. It is wonderful as both a starter and lunch, or with a salad and some bread as a main course. Make it either in a pie dish or small terrines like here.

You need 1 small handful of mushrooms, 1 chopped red onion, 2 pressed garlic, a little parsley and dill, 1 cup of asparagus, 2 cups of leftover salmon, 1 dl of cream, 1 large sheet of puff pastry. butter.

Fry mushrooms, onion and garlic in butter. Add asparagus, salmon and herbs. Taste if necessary. with salt and pepper. Cook it in a bit.

Grease an ovenproof bowl with butter, put the filling in it and make a lid of puff pastry. Bake the small terrines in the oven for about 10 minutes until the lid is golden and crispy.
