Homemade popsicles

Parfait is the French word for what we here in Denmark call homemade ice cream. In France, where the ice cream originates, parfaits are always made with cream, eggs, sugar and syrup to create a custard-like puree. Various flavoring ingredients are then added. Homemade ice cream is one of the most delicious things you can imagine, and it's actually quite easy to make. You can make it in many other ways than the French, for example with cream or yoghurt or as a sorbet. You can use all the fresh fruits and berries of the season and all the good, wholesome ingredients. Here we give you inspiration for some really delicious combinations.

Basic recipe for Parfait

3 dl whipping cream, 2 egg yolks, 50 g sugar, 1 tsp. vanilla sugar or grains from ½ vanilla pod. Whip the cream until stiff. Beat the egg yolks white with sugar and vanilla sugar. Mix in the cream and freeze the mixture for a few hours. Take out the ice cream and mix the filling in. Put the ice cream in the molds and freeze them again for at least a few hours. If you want to dip the tops of the popsicles into something, freeze them completely, dip and refreeze.

Strawberry ice cream with fresh strawberries tastes fantastic. Here we have blended a handful of fresh strawberries and stirred them into the ice cream mass. We have decorated the ice cream with strawberry shavings. Chocolate parfait: For this ice cream, we simply melted 100 g of good, dark chocolate, which we mixed into the ice cream mass. We purposely did not stir the chocolate completely to create the nice pattern. When the popsicles were completely frozen and could be removed from the molds, we dipped the tops in chocolate. Ice cream with nut crust: For this extremely delicious ice cream, you need 100 g of almonds and 50 g of sugar. Drain the almonds and add to a pan with melted sugar. When the mixture begins to caramelize, pour it into a dish lined with a piece of baking paper, and then the croquette must solidify until the next day. Make a portion of parfait ice cream and mix in the chopped crunchy. Freeze the ice creams in the molds, take them out and dip them in melted, dark chocolate. Work must be done quickly when dipping them. Serve extra crispy with the ice cream. Ice cream with banana/vanilla and coconut is inspired by the recipe for our favorite smoothie. Here we have blended 2 ripe bananas and 50 g of coconut and mixed it into the yogurt ice cream. When the ice creams are frozen, they are sprinkled with more coconut.

 Basic recipe for yogurt ice cream

2 pasteurized egg yolks, 150 g icing sugar, 500 g Greek yoghurt. Beat the egg yolks white with icing sugar. Add Greek yogurt. Pour the mixture into a freezer-safe bowl and put it in the freezer. When partially frozen, stir the mixture and add the filling. The ice is completely frozen after 4-6 hours.

 You can make exactly the same kind of filling for yogurt ice cream as for parfait. Yoghurt ice cream with raspberries is made by blending 100 g of fresh raspberries and mixing them with the ice cream when it is partially frozen. Sprinkle with freeze-dried raspberries if desired. Blackberry ice cream is made with fresh blackberries that are mashed with a fork and mixed into the ice cream when it is partially frozen. Garnish with melted white chocolate. You can also make a really delicious licorice ice cream by mixing 1 tbsp. licorice powder in the ice cream when it is partially frozen. Sprinkle with licorice when serving..
