Cheesecake with Kiwi

A wonderful, easy dessert with fruit. The kiwis give it a little edge/acidity and the blackberries sweetness. It can be made well in advance and left in the fridge if you are having guests. Get well.

Cheesecake with kiwi and blackberries

4 tablespoons of sugar

150 g fresh blackberries

150 g kiwi

1/2 lime

200 g cream cheese

2 tablespoons powdered sugar

3,5 dl whipping cream

100 g digestive biscuits

50 g butter

Mix 2 tablespoons of sugar with blackberries and bring the mixture to the boil in a saucepan. Do the same in another pan with kiwi, 2 tablespoons of sugar and juice from 1/2 lime. Allow both fruit compotes to cool. Mix cream cheese with icing sugar. Whip the whipping cream until stiff and carefully fold it into the cream cheese mixture. Crush the digestive biscuits and mix them with melted butter. Spread the biscuit mixture in the bottom of a glass bowl. Place alternating layers of cream cheese cream and fruit compote in the bowl. Start with a layer of biscuits at the bottom, then cream cheese cream and finish with fruit compote.
