Brunch Pancakes

There is nothing cozier than starting the day by baking pancakes. It is "slow living" at its best. Such a winter morning, fire in the stove and fresh coffee in the cup and then make a large portion before the rest of the house gets up. It can be difficult to get them to puff up and become thick and delicious, but now I have found the technique! It's about making sure you whip the whites separately, add baking powder and then the all-important thing: the dough must actually be quite thick... and then it's also a bit about patience. Not too much heat, then they grow quietly and become super tall and airy.

250 g wheat flour
½ - 1 tsp. baking powder
2 tablespoons of sugar
1 tsp. vanilla sugar
1 tsp. cardamom
1 pinch of salt
½ teaspoon vanilla sugar
2 eggs
2,5 dl milk

Butter for frying

Beat the egg whites completely stiff. Mix the dry ingredients together in a bowl. Add the egg yolks and milk and whisk together before carefully folding in the egg whites. Fry in plenty of butter.

Serve with syrup, jam and possibly berries and skir.
