Winter food: Osso buco with mash
We Danes adopted this Italian dish many years ago. It is a fantastic simmered dish that is perfect for winter Sundays in the winter time.
Osso Buco
For 4 people you will need:
4 pieces of beef shank
Salt and pepper
Oil
1 onions
2 cloves of garlic
200 g carrots
100 g parsnips
1 leek
1 can of chopped tomatoes
1 tablespoon tomato paste
2 dl white wine
3 dl beef broth,
Bay leaves
parsley
thyme
Clean and cut the vegetables into bite-sized pieces. Distribute them in an ovenproof dish with a lid or a thick-bottomed pot together with the other ingredients. Put the lid on and let the dish simmer for three hours, preferably more.
Mash as a side dish
For that, make a mash of 500 g of boiled potatoes and 200 g of boiled carrots. Add salt, pepper, a little broth and butter to the mash. Other vegetables and root vegetables can be added according to taste and preference.
