Late summer is upon us. There is something very special about this time of year. It comes quietly and softly – like a dear friend who is not in a hurry, but simply sits down next to us and reminds us to enjoy what is still there. The sun is a little lower, the colors are deeper, and the garden is now full of everything we have been waiting for: sun-ripened fruits, flowers in full bloom and vegetables with the taste of sun and summer. August and September are months when we gather the last of the summer heat and try to stretch it a little longer. Perhaps by moving into an orangery, lighting a candle and letting the scent of ripe apples and freshly baked cake spread. Or by enjoying a good dinner with those we love – prepared with the finest seasonal ingredients.
In this issue, Mathilde, Tine and Vibeke have shared recipes that capture this mood – simple, tasty dishes with fruit and vegetables, sourced from the late summer pantry. It’s all about being present. Finding joy in what’s close to you, what’s natural and what we create around us. We hope that you’ll be inspired, find the little moments and enjoy them. That you’ll breathe a little deeper, let your shoulders drop and maybe even extend the summer a little, thus making time feel a little slower – and a little richer.
