Pickled green tomatoes

Before the frost sets in, the last must be harvested in the herb garden. Including the tomatoes. They are still green and in these times when we are trying to limit food waste, they must of course be used for something. We make pickled green tomatoes from them. It's super easy and they taste fantastic. You get the recipe right here;

600 grams of green tomatoes

  • 200 grams of sugar

  • 1,5 dl vinegar

  • 1,5 dl water

  • 1,5 tsp. vanilla sugar

Wash the tomatoes and cut them into small pieces or prick them with a fork. Boil the stock and add the tomatoes, let them simmer for a few minutes. Put them on clean atamon rinsed glasses. Leave them for a few weeks before eating. Eaten as snacks, side dishes, or hot dishes.
