Bonfire in the garden

When the Danish summer shows itself from the good side, with sun and calm wind, there is nothing better than gathering friends and family for a cozy get-together. One thing we have a tradition for here at Kærby Mølle is making fires and the garden. A sure thing on the menu is Lars' bonfire bread. They can be eaten with almost anything. On Saturday, we had invited the neighbors to a bonfire (- the nearest lives 500 meters from here :) - the menu was a simple "One Pot" and campfire bread with feta cream and tomato salsa for starters. One Pot is when you cook food where all ingredients are in the same pot. It's simply that easy and you can almost use whatever you have in the fridge.

Recipe for bonfire bread for 12 people:

2 packets of yeast
1 liter of water
1 tbsp. salt
1 tbsp. sugar
1 dl. oil for the dough
approximately 1,5 kg of flour, it may well be 1/3 wholemeal

- honestly, I forgot to measure exactly how much I used! AND there was too much dough, so you can easily make half..

Crumble yeast and add lukewarm water, stir the yeast into it. Add sugar, salt and oil and stir. Add the coarse flour first, if using, and then the wheat flour until the dough leaves the bowl. Knead the dough really well. Let it rise for at least an hour, but preferably longer.

For this I made a feta cream and a tomato salsa, - a heavenly and really easy starter.

Feta cream:

1 block of feta cheese, 500 g
1 cup of sour cream 18% 500 g

Moses with a fork

Tomato Salsa:

1 kg fresh tomatoes, diced
1 small diced onion
3 cloves garlic, minced
1 small handful fresh basil, chopped
2 tbsp. olive oil
1 tbsp. apple cider vinegar
salt, pepper, a little sugar

Mix all ingredients, taste and let the salsa soak for an hour.

Recipe "One pot" 12 people:

300 g diced bacon
20 sausages, sliced
800 g chicken breast, diced
500 g fresh spinach
250 g sliced ​​fresh mushrooms
2 onions 4 cloves garlic, chopped
2 carrots grated or chopped into mini choppers
2 tins of chopped tomatoes and/or 500 g of fresh tomatoes in smaller pieces
4 packages of fresh pasta
1/2 liter cream, 38%
1 liter water salt and pepper
1 bouillon cube
3 tbsp. oyster sauce

Toast bacon in the hot pan, add meat and let it fry just a little, then add all the other ingredients and let the dish simmer over a fire until the pasta is tender. Stir it around occasionally.
