Leek pie

2 dl thinly sliced ​​leeks - and 1 grated squash or other greens (broccoli, peppers, onions, etc.)
200 g cubed ham or other leftover meat (chicken, cutlet, etc.)
8 egg,
1/2 dl. oil,
1/2 dl flour,
1 dl yogurt, sour cream or cottage cheese,
1 handful of grated cheese,
1 tbsp. Provence spice,
salt and peber

In a bowl, whisk eggs with oil, sour milk product, flour and spices. Put the finely chopped vegetables and diced meat in there. Distribute in a pie tin greased with oil. Sprinkle with grated cheese and bake in a preheated oven for approximately 30 - 40 minutes at 170 degrees until the cheese is golden. Serves warm.

This pie is cheap, super easy to make as it has no "bottom". The filling can be varied endlessly with whatever you have left over in the fridge, so it is also a hit on the "avoid food waste" account. We often serve a piece of bread, a green salad or a tomato salad and then you have a nice meal for 4 people.
If you want a pie without meat, double the vegetables instead.
