December 16: Cinnamon-roasted almonds

Treat yourself to these delicious cinnamon roasted almonds. You get a lot out of this recipe, but they also disappear quickly...

What you need:
1 cup paste. Egg white
1 teaspoon vanilla extract
300 g Almonds
100 g Sugar
100 g cane sugar
5 teaspoons ground cinnamon

Here's how you do it:
First, beat the egg whites together with the vanilla extract and beat until foamy - it should not be stiff, just slightly foamy. Then put the almonds into the mixture and add sugar, cane sugar and cinnamon. Stir the whole molevit together well so that all the almonds are covered with a fine layer of cinnamon sugar. Here, make sure to get all the way to the bottom, so that the egg white does not fall to the bottom, but instead is distributed over all the almonds.

Then turn all the almonds out onto a baking tray lined with baking paper. Spread them well over the entire plate and bake them in a 120 degree oven for about 45 minutes. However, keep a close eye on them throughout the process and make sure to turn them around on the plate occasionally so they don't burn.

Finally, let the almonds cool on a baking rack, and then put them in an airtight container/cake tin, or pour them into a fine cellophane bag. Tie a pretty ribbon around them and give them away to someone you care about.
