Elderflower juice

Right now the elder is blooming and the scent spreads when you go for a walk in the forest. Karin, my sweet bookkeeper, has been in the kitchen making this easy recipe for homemade elderflower juice made without citric acid. You must use;

20 screens elderflower
2 pieces organic lemon
250 g. sugar
0,5 liter of water

Remove any animals and unsightly flowers, but don't rinse the flowers, as much of the flavor is in its pollen. Put two sliced ​​lemons in a bowl with the screens. Boil sugar and water in a saucepan until the sugar is dissolved and pour over. Put the lid on and put it in the fridge for a few days. Mix with water, sparkling water, Cava or use for baked goods. The juice can last a few weeks in the fridge or you can freeze it in smaller portions.
