For the event here at Kærby Mølle, which we held on Saturday, the Hjulmand Madsen family stopped by and cooked on a fire. The boy helped diligently and the food was prepared in the shade of the large trees by the lake. I'll let you know more photos from the day later this week. The food Michale and Cat made was a big hit and more people wanted the recipes. They come here;
Summer casserole on the fire:
500 g venison, 200 g greylag goose, 200 g mushrooms, 1 pk diced bacon, 2 large carrots, 1 kg potatoes, 1-2 red onions, 1 bunch of spring onions, 1 clove of garlic, 2 tbsp. taste-neutral oil, 1 tbsp tomato puree, 1/2 l cream, 4 dl water, 1 bouillon, 3 dl apple juice, 1 tsp. ground paprika, salt and pepper.
Peel and dice carrots, apples (preferably peeled) and potatoes. Clean the onion and spring onion and cut into cubes and small pieces. The meat is also cut into small pieces.
Heat the pan with oil and roast the paprika in it. Press the garlic and add it together with the bacon. Then the meat is added and everything is fried until golden... it must not burn...
Then add onions and spring onions. If it gets dry quickly, you can add a little more oil. Carrots and potatoes are turned in, with tomato purée and the water is added, when it has been turned well, add 1 chicken broth. It should simmer for 15 minutes.
Then it's time for the apple pieces and apple juice. Boil it up and add the cream. Now it all gets a nice orange color and it's done when the potatoes and carrots have a finished consistency.
Season to taste with salt and pepper. Can recommend good bread and a cold beer.
They also served small "hapser" with smoked wild game and leek cream.
100 g smoked game, 1 flute, a little oil for toasting bread
Leek cream of;
3 leeks, 3 tbsp. butter, 1 Chicken boullion cube,
1/4 whipping cream, salt and pepper, 1 tsp. lemon juice.
Clean and cut the leeks into thin slices.. Melt butter in a pan and fry the leeks golden, they must not turn brown, only nice and soft.. Add cream and broth and let it simmer until it gets a delicious creamy consistency, be patient .. not too high heat.. Season to taste with salt, pepper and lemon juice...
Toast slices of bread, add leek cream and slices of smoked game. HAPS, it tastes good!
